      So I'm trying to get better at understanding how dishes at more modern restaurants come about and I think having an understanding and knowledge of classic/traditional dishes will be tremendously helpful in that respect. My school focuses on french cuisine so I'm just beginning to understand "modern takes" on classical french dishes. I would like to do the same for other cuisines, particularly american and english ones. Can we start a list of classic dishes that every cook should know? For example, one that gets used often, shrimp and grits, or fish and chips, etc...I'm really trying to expand my knowledge and don't know where to start.         I was a culinary student before but had to drop out because of some financial problems. But my passion was cooking and i really love food. unfortunately i could not continue my education. so im wondering if is possible to become a chef would out a certificate? I love to cook and I believe becoming a chef requires more than being kitchen-savvy. You need sharp communication skills, honed creativity and business acumen. A college degree in culinary arts helps you gain these skills, but it's not a necessity.         What is the Best Culinary School from an Exec. Chefs perspective?

          I have been searching for some time now about which culinary school/ institute/ academy is the best from an experienced Executive Chef's perspective. I have read things like "just go to the cheapest one" and "it doesn't really matter" as well as "choose the one with the best instructors". I think the last of those examples is fairly obvious but how do you determine which schools actually have the best instructors from the ones that just say they do. I have been in the food industry for over 5 years and have been mainly concentrated on baking until this point.
