Papas Arrugadas: These indigenious wrinkled tiny potatoes with a creamy yellow interior from the Canary Islands, Spain are prepared in ocean water until they form a salty crust. Then they are served with a Red Mojo, which is a sauce made from chili peppers, garlic, spices and vinegar. The other way to serve these potatoes,  is with a Green Mojo consisting of parsley, coriander and garlic with olive oil.
