Definition:
Carpacchio: Extra finely sliced raw beef fillets or salmon served with
extra virgin olive oil, capers, lemon and fiore sardo or pecorino, aged ewe cheese grated and sprinkled on top of the beef fillets. Some modernists serve on a bed of Arugula ( Rocket in England) and also called Rucola.
