Definition:
Herb: Guascas, an indigenious herb in Colombia´s rain forested areas is a grassy herb called Ajiaco. The dish called Chicken Ajiaco, a lovely stew and it is the national dish of Bogotá, the Capital. It looks like a wide chive, and is used in Colombian stews.

Some precisions:
- guascas are not an herb from the rainforest areas of Colombia. It grows in temperate areas, and is mainly found in the region of Cundinamarca around Bogotá which sits above 2000m of altitude.
- this herb is not called ajiaco. Ajiaco is a dish.
- this dish called Ajiaco always contains chicken, hence no need to call it "chicken ajiaco". it is simply called "ajiaco", at least in Colombia.
