Pisto Manchego: Is a coarsely chopped Mediterranean vegetable stew used as an appetiser or Tapa throughout the Iberian Peninsula. The English and French translation is Ratatouille. The ingredients include: aubergine or eggplant, onion, garlic, tomato, zucchini, olive oil, herbs and salt & pepper freshly grinded.
