Water bath , French : Bain marie, is a technique by placing a container ( bowl, souffle dish, pan etc ) of food in a larger , shallow pan of warm water, which surrounds the food without direct heat, but with gentle heat. Food can be cooked this way in an oven or stovetop.
Great for cooking dishes without breaking up or curdling, such as custard and other foods.
It is a great way to keep foods warm.
