Vidalia Onion Relish

11 ½ cups diced Vidalia onions (8)
½ cup chopped red peppers
¼ cup salt
½ teaspoon turmeric
1 teaspoon mustard seed
2 teaspoons pickling spice
2 cups cider vinegar
2 ½ cups sugar



 

 

Mix the onions, peppers, and salt. Wait 40 minutes drain/squeeze. Cook the turmeric, mustard seed, pickling spice, and vinegar for 10 minutes and cool, strain and discard the spices. Cook the spiced vinegar, sugar, and drained vegetables until thick.
