Blueberry Grunt

(using Bisquik or another baking mix makes this dish a snap to put together at the last minute)

4 cups fresh blueberries
1 cup water
1 cup granulated sugar
2 cups Bisquik
2/3 cup milk
1 Tbsp. sugar
2 Tbsp.  lemon or orange zest
½ tsp. salt

In a large pot combine blueberries, water, and sugar.  Bring to a boil, reduce heat and simmer for 15 minutes.  Meanwhile make dumpling batter by combining the rest of the ingredients.  Don't over stir the batter or it will toughen the dumplings.  Drop the dumpling batter into the simmering blueberries a tablespoon at a time.  Cover and cook for approximately 15 minutes or until the dumplings are done.  Remove from heat and allow to cool for 5 minutes before serving. Serve with ice cream or heavy cream drizzled over top.
