Thinking about a Wine Tasting Party

I'm thinking about hosting a wine tasting party. I was thinking about asking each couple to bring a certain type of wine and then I'd provide the cheeses and foods to compliment each wine.

What do you think? Anyone ever hosted one? Any suggestions?

Many, many, many.

Start with Champagne (oysters and Caviar)

Then a Sauvignon blanc based wine (Comte, Brie)

Then a dry Alsatian or German or American Riesling (Smoked chesses)

Then a Grand Cru Chablis (Butter poached lobster and crispy goat cheese croutes)

Then a oaked Chardonnay (grilled shrimp in verjus and a Gouda fondue to dip)

Then a Pinot (cherries filled with ricotta and five spice powder)

A Cabernet with Manchego

A botritis wine with Roquefort and almonds.

Wonderful suggestions! Thank you cape chef! Can I ask you one thing? What else would you serve with the champagne instead of oysters? It's just that in my neck of the woods, good oysters are hard to find.

Graved lox with an Aquavit aioli.

Tuna tartare

Civiche

I'm off to work now.

Perhaps tonight I can offer more insight.
