Not sure if mushrooms can be pickled successfully - anyone else have suggestions? I know you can marinate them with oil and vinegar & herbs and get a good result.

Lots of vegetables can be pickled - onions, cabbage, cucumbers, carrots, cauliflower. Lots of recipes on the web - try googling it and I'm sure you'll get some good recipes :)

Thanks for the ideas.
The mushrooms are very good to pickles. You should try because it’s very good in salad and stewpot any thing really.

They can be pickled. I like to marinate them in a lemon vinaigrette with garlic and dry herbs (basil, oregano, rosemary).
