I don't know about you but before Bruce Aidells it had been a long time since our last guest at ChefTalk (was Sid Cook master cheese maker from Carr Valley cheese).

I am looking forward to talking with James Peterson as I have been a fan of his cookbooks for many years. How about the rest of you?

Never heard of him on this side of the pond. Because of that i've just ordered two of his books from Amazon, "Sauces: Classical and Contemporary Sauce Making" and "Cooking".

He had better be good!!!:p

Indianwells, did you notice that we have reviews of both those books on the cheftalk homepage?

When you get your copy of Cooking, be sure and read the introduction. Literally everything you need to know about cooking is expressed in one paragraph right there.

It surely would be a terrible thing to die of low cholesterol!
