"Cooking" and your time

First off, thank you so much for sharing your time with us! We actually met a long time ago at The Book and The Cook event at Tatnall High School in Wilmington, many, many moons ago.
After reading Cooking, I have to ask about your time investment. The tome is obviously lengthy and very detail-rich. How do you organize, plan and effectively use your time? Roughly, how long did it take you to complete?

Cooking and Your Time

Hi,
It took me about 2 years to complete cooking. I'd write on the week ends and photograph during the week. It was a rush.

How organized do you have to be for a book like this. Is the organization and testing all your or do you have help?

Hi Nicko,
Where is everybody? Yes, cooking took a lot of organization. I hired people to help me test and of course I have an assistant who is also the hands. It takes a lot of organization to caption all the pictures and make sure the captions are consistent with what's in the recipes.
