You might want to consider getting some used equipment. They can be a good deal and in good condition. Check your local restaurant supply store and tell them what you will be doing. They'll have a good idea of the tools you'll need for the volume you'll be doing.

BTW, I used to work in a coffee shop when I was a student, and the things that sold the best were date squares, muffins, and mini-bread puddings that were made in muffin tins.
