One thing you didn't mention is the lack of repect form other professions. It is getting better, but unless you have a high-profile position, or are in a big city, people will look at you as a "cook". They lump all "cooks" together, whether it's the folks schlepping heat 'n serve or someone with certification and creativity. But as long as you have a passion for the food, don't worry about what other people think about you.
