Fred,
You sound like you could get a job cooking by day or evening and go to a part time culinary programme to sharpen your skills.Try a 6 month full time programme at the French Culinary School or try advanced placement at another school.
I don't know where you are located but generally there are community colleges that offer such programmes.
Look up culinary schools on your web browser.
