Size of vegetable cutting
Brunoise = 2x2 mm
Macedoine = 4x4 mm
Julinne = 1or2 mm x 1or2 mm x 4-8 cm
Jadiniere = 4mm x 4mm x 3 cm
Paysanne = 5mm x 5mm x 1 mm ( for leek 1 cm long et 1 mm thickness)
