Hi TBone and welcome to Chef Talk. A lot of what you said about yourself describes me, too. I grew up a it farther west (Quad Cities) but know the Chicago area pretty well. I also had wonderful home cooks to teach me the basics. I think the emotional aspects of cooking are best learned this way.
