You're more likely to find them available from pastry and baking supply houses than from kitchenware and restaurant supply places. At least that's been my experience.

Keep in mind that they don't come cheap. And are often in sets of the same size. So for the home kitchen they may not be economical.
One alternative: For things not requiring cooking, PVC pipe, in various diameters, can be cut down to the appropriate height. |
