I’m a cookie person, love me some cookies. The only thing better than a cookie IMO is a sandwich cookie. Take either one of the PB cookie recipes here and fill with a PB filling and it’s even better. Don’t over fill as it might be too rich.
PB frosting filling:
½ cup creamy peanut butter
3 cups confectioner’s sugar
1 tsp vanilla extract
5 TBS milk
Cream the PB and sugar. Add the vanilla. The milk is used to adjust consistency so you might not need all of it or you might need more. |
