Since I have never braised anything for 12 hours or even close to it. I go his route, Time factor could vary slightly based on size of ribs. I do lamb shanks the same way. The difference between 325 and 350 is not that much. I normaly dont roast anything over 350 but I do braise at that temp if not even higher.
