Default Chefs Collaborative and using local ingredients

Hi everyone -
This is for a class project, actually: we're looking at promoting local ingredients to restaurant chefs.
So, two questions, if you have a couple of minutes:
1. As a chef, is using locally grown (sustainable, organic) ingredients important to you?
2. Chef Collaborative: thoughts? are you a member? do you find it useful?
