Make a slaw with the cabbage, scallions and apple. Sweet potato mash (spice it up with what you like). Simple fried pork chops, creamy gravy if you've got cream.

Or a stir fry. Trim and thinly slice the pork, peel, core and thinly slice the apple. Shred the cabbage. Marinate the pork in a little soy and oil and pepper mixed with a little cornstarch for 10 minutes. Heat up a wok/ frypan, add oil, sear off the pork till it just changes colour. Remove and keep warm. Little more oil in the pan, toss the cabbage and apple till a little soft but still crispy, add pork back in, mix till reheated. Add in spices such as ground ginger and chilli powder if wanted, and a little chicken stock to make a sauce. Thinly slice scallions, toss into mix briefly, serve.
