Very cool stuff Bouland! As a weekend warrior, I realized a couple of years ago just how important knives and knife skills were. I was using supermarket knives and doing unspeakable things to food. I have upgraded both my cutlery and my competence. I even took a knife skills workshop with an instructor who feels the same way you do.
