Allot can be experienced with different ethnic cuisine here in the U.S, but its not truly authentic because it has been subtley changed to fit american tatse's. I want to experience the real deal, and to do that I must travel to these places and sample it in its native enviroment, plus like someone once told me (Thanks for the advice Shawty

) the stories behind the food are probably the most exciting part of the experience.
I guess I still have the excitement of youth with me and have'nt yet been burned out and become bitter and hardened like some of the chefs on this planet.
