Crane,
If you haven't already, stick a thermometer in your oven to make sure its calibrated right. It could be baking to low. I will suggest that you follow recipes and not alter until you getting close to what you want. when your creaming and adding eggs make sure not to break. You may be under/or overmixing or maybe your are just jinxed!!!!!
