| | Man, this Professional Vegetarian Cookbook is awesome. I've been reading it from start to finish. I didn't know that potatoes give off a chemical that rots onions! I would have bet it would have been the other way around since onions seem so much more "odoriferous"!
And the debate on raw tahini vs toasted sesame seed tahini is finally answered, as I always thought, the toasted variety seemed so much more tasty. The author claims the raw tends to be bitter!
And the fact that the recipes are for 10 servings is great, as I always try to cook in large quantities anyway, for making lunches for the week, canning, freezing, etc. And to make efficient use of energy sources of heat (natural gas).
Awesome book, did I say that yet??
Thanks Nicko and Chef talk. To think I was one of the lucky 30 out of some 14-20,000 Cheftalkers is amazing. I think I should go buy some lottery tickets as my luck seems to be changing, FINALLY!
Now, if only the window contractors install my new replacement windows correctly today (Friday) and my house doesn't end up looking like PeeWee Herman's Fun House!
