Default Open Forum With Author Leslie Mansfield March 24th

ChefTalk.com is pleased to welcome author Leslie Mansfield to the ChefTalk Cafe for a week long discussion of her latest book:

The Lewis & Clark Cookbook: Historic Recipes from the Corps of Discovery and Jefferson's America

Leslie has written a number of wonderful books and you can read her bio below to learn more about her experiences and her books.

LESLIE MANSFIELD
Biography

Leslie Mansfield lives in St. Helena in the beautiful and bountiful Napa Valley with her winemaker husband, Richard. Prior to that she lived in France for two years and in South Korea for five years. She has traveled extensively throughout Asia, Europe, and Africa, studying the cuisines of those lands and recording their culinary customs.

Mansfield is a graduate with honors in both Cuisine and Patisserie from the Ecole Ritz Escoffier in Paris. She is a certified Master Food Preserver from Oregon State University. Additionally, she holds a degree in Art History from the University of Washington and has taught at the American School in Pusan, South Korea. While in South Korea, Mrs. Mansfield was an apparel designer for Nike, and developed fifty percent of Nike’s line of Olympic apparel for the 1988 Olympics in Seoul. After leaving Nike, Mrs. Mansfield was a partner in a successful Portland, Oregon catering company, taught cooking classes at Portland Community College, and was a frequent guest on A.M. Northwest, a popular morning television news magazine.
Mansfield just released her eighteenth cookbook in October 2002, The Lewis and Clark Cookbook, Historic Recipes from the Corps of Discovery and Jefferson’s America (Celestial Arts 2002). This cookbook was designated the official cookbook of the Bicentennial of the Lewis and Clark Trail and it is quickly becoming a bestseller.

Her expertise in historical cooking has led her to the upcoming History Channel’s television show, The Mess Kit, as a consultant to ensure authenticity in their descriptions of life along the Lewis and Clark Trail. She is also a popular cooking demonstrator, celebrity chef, and television and radio guest.

Among Mrs. Mansfield’s eighteen cookbooks are: The Mauna Loa Macadamia Cooking Treasury (Celestial Arts, 1998); Recipes from the Vineyards of Northern California (Celestial Arts 1999), a nine part series of cookbooks featuring the wine country of Northern California; and Recipes from the Microbreweries of America (Celestial Arts 2001), a celebration of great casual food and beer. Also by Mansfield under her maiden name, Leslie Whipple: The Oregon Trail Cookbook (Maverick Publications, 1992), the official cookbook of the sesquicentennial of the Oregon Trail and The OMSI Cookbook (Maverick Publications 1993), which generated significant funds for the Oregon Museum of Science and Industry; Recipes from the Vineyards of Oregon (Maverick Publications, 1994); and The Oregon Coast Aquarium Seafood Cookbook (Maverick Publications, 1996).
