Starting a blog

Hi chef talkers, I'm going to take a shot at "blogging" Not sure really what to do, but I will write about my experiences teaching culinary arts, and/or any other interesting nuggets.

A bit about me, I have been honored to be a part of chef talk for over 7 years and have seen it grow to what it is today, while never loosing it's homey,community feeling (thanks Nicko)

I have been teaching culinary arts for about 4 years after 25 years in the industry. I'm a graduate of Johnson & Wales, The School for American Chefs, and have continued my studies at the CIA Greystone.

I primarily have worked in French restaurants and hotels in New York city and Connecticut.

I teach French cuisine, food and wine pairing, food and beverage cost controls, catering and banquets, techniques of healthy cooking and menu planning (these are my primary classes)

We are closed now until the 7th, so when we get back I hope to be able to bring you into the life of a chef instructor. Also, look for Jim Berman's blog, he teaches culinary arts in Delaware and has amassed some wonderful awards with his classes.
