This is a sample blog entry for which the 2nd year Culinary Arts students in my class may model.

(Chef) Well, we are in our second week of school and there has been so much ‘stuff’ that has not yet been cooking. We have covered chemical safety, uniform care, menu planning and class expectations, but we have not yet stepped foot into the kitchen. Wednesday is fire safety with actual controlled fires. Adventures in Toroweap, Arizona

180 miles of deserted and isolated roads can turn into an adventure following a couple mechanical failures and close to two inches of rain resulting with some nice wet and sticky “calachi”. A new word I will not forget it’s spelling very soon.
But it was some fun days, some spend in the tent reading and eating. Preparedness has always been the key in my traveling and it paid off big time. We actually arrived

Still Trying

Let's see, I've gone through another two landlords since I last wrote. The first had an old deli that would be perfect - in an industrial area which would have given me a great rate, but the landlord got cold feet since I'm a startup. He was going to give me a 3 year lease. Period. No option to renew. I cannot imagine dumping close to $100,000 into a space that I will most likely get booted out of in 3 years and have to go through this process again. Even worse, my clients would possibly have...

Week 1; Semester 2

I was trying to arrange my schedule in such a way that I would be more easily available for any jobs that come available. so I decided to place my classes on a single day. Fortunately, the two classes I wanted were actually available at non-conflicting hours. So......

This semester, I am taking a class called Aromatics, as well as Butchery.

The Aromatics class is actually a restaurant experience class where we will rotate through various stations for live service...
