Everything... all the time

This is a sample blog entry for which the 2nd year Culinary Arts students in my class may model.

(Chef) Well, we are in our second week of school and there has been so much ‘stuff’ that has not yet been cooking. We have covered chemical safety, uniform care, menu planning and class expectations, but we have not yet stepped foot into the kitchen. Wednesday is fire safety with actual controlled fires. Then the real fires get lit. Thursday we will prep for the forthcoming visit of the food writer from the local paper. This really is the litmus test for where everybody is in terms of cooking ability as well as the measure as to how we can work as an effective team. So much has come from the summer reading of Daniel Boulud’s Letters to a Young Chef and the success of the team. It will be interesting to see how we all measure up to his expectations in terms of working as a one unit, working with clear goals in mind and setting the stage for future successes. So, dear students, while we begin again on our kitchen adventures, there is so much more at stake; a second year, a set of goals and the knowledge that you are more than halfway through your high school careers. Those are some big ideas. Where will you be a year from now? How will you meet the demands of this year? And most importantly, are you ready to commit everything, all the time, to your success?
