I really have no idea where to start. So much has happened this year it's crazy! Cafe is a lot different then i thought it would be. Last year we just saw the finishing process of it all and I remeber telling myself how hard could setting up cafe be?, and now I know. It's such a rush to try and get set up. At first I thought I wouldn't be able to count on anyone else in the other class just because of our different personalities but now I rely on them like they rely on me. Were a team and were one class not two. It's a rush when your running around the kitchen trying to find the last touches for your station or running to make a demo plate, but once it's all over it's worth it. It's funny when were setting up and I hear "this kitchen's to small" or "i wish we had more space" because in the "real world" that's how it is. Your boss well not sit there and listen to you complain about how you don't have enough room on the line. He or She isn't going to say okay you can go somewhere else where there is more room. They are going to expect you to get the job done no matter the circumstances. So far as a class we are doing pretty well but as Daniel Boulud once said "being good is not good enough."
