HI everybody , my name is Tessa , Im from Auckland New Zealand, I am a fully qualified Chef with lots of experience, I have just started going back to school to specialise in Patisserie.
I have been Studying at NSIA for just over 3 months now and will be studying right through 2008 and hope to go on to advanced training for another year after that.
I love to make food for others, taking amazing raw ingrediants and turning them in to something quite different. One of my passions is baking , I have been doing cake decorating as a hobby and just loving it , I love making sweets and confectionary as well as cookies , cakes, slices and all things
naughty but nice. I look forward to showing you things I have made especially from class

we did a stint in our training restaurant

this week, we all have to do at least one day in the restaurant in each semester
our tutor designed the menu and i was in charge of the patisserie section , we had to do two mains and two desserts, the desserts of the first day i did were lemon meringue pie with raspberry couli and a white chocolate mousse with vanilla tuilles and i did a cinammon mascapone cheese to go with it.
I had two helpers with me both had never done any kind of restaurant service so it was great being able to show them new things.

i cant seem to get the photos to upload , it says they are too big and i dont know how to downsize them , i will post them on my site
