HI everybody , my name is Tessa , Im from Auckland New Zealand, I am a fully qualified Chef with lots of experience, I have just started going back to school to specialise in Patisserie.
I have been Studying at NSIA for just over 3 months now and will be studying right through 2008 and hope to go on to advanced training for another year after that.
I love to make food for others, taking amazing raw ingrediants and turning them in to something quite different. One of my passions is baking , I have been doing cake decorating as a hobby and just loving it , I love making sweets and confectionary as well as cookies , cakes, slices and all things
naughty but nice. I look forward to showing you things I have made especially from class

Over the weekend i made some cupcakes for a freind

i made carrot cupcakes , with fresh walnuts and sultanas and then decorated it with vanilla and tangerine cream cheese icing and little fondant accents
I will post a picture later on the flavours in the cream cheese just so complimented each other and really bought out the flavours in the cupcakes.I couldnt beleive how the frosting really lifted the flavour of the carrot particularly
