HI everybody , my name is Tessa , Im from Auckland New Zealand, I am a fully qualified Chef with lots of experience, I have just started going back to school to specialise in Patisserie.
I have been Studying at NSIA for just over 3 months now and will be studying right through 2008 and hope to go on to advanced training for another year after that.
I love to make food for others, taking amazing raw ingrediants and turning them in to something quite different. One of my passions is baking , I have been doing cake decorating as a hobby and just loving it , I love making sweets and confectionary as well as cookies , cakes, slices and all things
naughty but nice. I look forward to showing you things I have made especially from class

been back at school a week

and already have my first exam next week. I tell you its all go this semester which is great. we are doing food costings at the moment , been working on my first assignment, we had to set up 3 entrees, 3 mains, 3 desserts, on a menu
adding all the different components in each menu item that I have written up, so far I have written up 13 different recipes with 11 more to go . Then I have to do food costings on each recipe, so that means I have to do 24 different food costing
talk about making extra work for myself

In a few weeks time we will be getting stuck in to the patissierie side which im hanging out for. These next few weeks are going to be a great refresher course for me , which is cool seeing as its been a long time since I have used some of this stuff

the exam went great Mezzaluna , all my exams have been good scoring high marks
i have never been very good math minded and some of this stuff i had forgotton bits of so its been great to refresh. I ended up with 36 different ideas to food cost which was great
