HI everybody , my name is Tessa , Im from Auckland New Zealand, I am a fully qualified Chef with lots of experience, I have just started going back to school to specialise in Patisserie.
I have been Studying at NSIA for just over 3 months now and will be studying right through 2008 and hope to go on to advanced training for another year after that.
I love to make food for others, taking amazing raw ingrediants and turning them in to something quite different. One of my passions is baking , I have been doing cake decorating as a hobby and just loving it , I love making sweets and confectionary as well as cookies , cakes, slices and all things
naughty but nice. I look forward to showing you things I have made especially from class

gosh i cant believe its been 5 weeks

back at school , its gone by really fast. we have been doing practicals all last week and this week and are currently in assessement mode at the moment
revisiting the classics soups and stocks , which for me is a bit like doing them in my sleep in some ways , but its been great and im just loving it. Will post some photos on the weekend of different things i have been doing . In just over 2 weeks we will be getting in to the pastry side of things ........ i so seriously cant wait and have already enrolled in the advanced course too which will start straight after i finish this one in september
