HI everybody , my name is Tessa , Im from Auckland New Zealand, I am a fully qualified Chef with lots of experience, I have just started going back to school to specialise in Patisserie.
I have been Studying at NSIA for just over 3 months now and will be studying right through 2008 and hope to go on to advanced training for another year after that.
I love to make food for others, taking amazing raw ingrediants and turning them in to something quite different. One of my passions is baking , I have been doing cake decorating as a hobby and just loving it , I love making sweets and confectionary as well as cookies , cakes, slices and all things
naughty but nice. I look forward to showing you things I have made especially from class

we did a stint in our training restaurant

this week, we all have to do at least one day in the restaurant in each semester
our tutor designed the menu and i was in charge of the patisserie section , we had to do two mains and two desserts, the desserts of the first day i did were lemon meringue pie with raspberry couli and a white chocolate mousse with vanilla tuilles and i did a cinammon mascapone cheese to go with it.
I had two helpers with me both had never done any kind of restaurant service so it was great being able to...

some assessments that I have done this last week

at school , now some of this was like doing it in my sleep but it was still great fun

making classic sauces and soups

This week we are starting basic pastry i so cant wait, doing things like rough puff,full puff, and short paste.
Next week we are doing full restauarant service in our training restaurant which will be a blast , my tutor is putting me in charge of the desserts...

gosh i cant believe its been 5 weeks

back at school , its gone by really fast. we have been doing practicals all last week and this week and are currently in assessement mode at the moment
revisiting the classics soups and stocks , which for me is a bit like doing them in my sleep in some ways , but its been great and im just loving it. Will post some photos on the weekend of different things i have been doing . In just over 2 weeks we will be getting in to the pastry side of things ........ i so seriously cant wait and have...

been back at school a week

and already have my first exam next week. I tell you its all go this semester which is great. we are doing food costings at the moment , been working on my first assignment, we had to set up 3 entrees, 3 mains, 3 desserts, on a menu
adding all the different components in each menu item that I have written up, so far I have written up 13 different recipes with 11 more to go . Then I have to do food costings on each recipe, so that means I have to do 24 different food costing ...

Im so excited to be back at school, I have been hanging out for weeks .
My tutor is great shes a very accomplished chef and such a great and interesting teacher as well.

I have moved in to a different class and its working so much better than the other one. My school is very much an international school so its a very mixed culture which is just great. My Blogs will be more frequent as I post things about school on a regular basis.
