So I took a clipping from a friends Rosemary bush and have been growing it, however I have noticed there are different varieties of rosemary and am wondering if it is better for any reason to purchase a known variety if I intend to use it for cooking?

The main issue you'll have is if it can survive your winter. Most Rosemary varieties are zone 7 as I recall and don't take a hard freeze at all. Arp Rosemary survives zone 5 winters quite well.

I live in Northern NJ which can get pretty hot during the summer (96 the past few days) and pretty cold during the winter. I have had rosemary growing and it seems to stand through everything. Im not really sure what varieties it is but it is a strong plant. BUT when i know the cold is comming i bring my plants inside (they are growing in pots just for that reason)

I also tend to "baby" my herbs.

There really isnt that much of a difference in flavor or usage when choosing different verities.
