Default Edible Water Plants for a Water Garden?

Hello All!

I live in the desert of rural Arizona. To help keep myself sane, I built a 5000 gallon freshwater pond in my backyard. The sight and sound of a soothing five foot waterfall and the presence of vibrant greenery from water mint, water chestnuts, and various rushes planted in the shallows is incredibly restful.

Koi swim in the 4 feet depth of my pond. Birds, ground squirrels, and lizards sip water from the shallow water in my bog garden.

I've been thinking of adding on to this pond and have given thought to planting edible water plants.

I already have water chestnuts and water mint. I'm thinking about adding water lettuce and watercress.

Can anyone think of other edible water plants that could grow in zone 8?
