Default premature winter squash -- what to do....

Hi...can premature winter squash be used to make pickle relish? What other things can be done with premature winter squash? The type we have a LOT of -- it was an experiment -- is something like Lunga d' Napoli (I'm relaying to you my wife's pronunciaiton of it, as it sounded to my ears...) Even if you're not familiar with this particular squash, we're interested in things to do with premature winter squash in general.
