Post Iam looking for some books

Iam starting chefschool in 3 weeks and was wondering if anyone can suggest additional books that would be helpful in school.
Someone mentioned "the culinary handbook" or something similar.
Any response will be appreciated.

two books that I have are the food lovers companion, which is a pocket encyclopedia, and my text that I am using for my apprenticeship is called On Cooking.

One would think your school could provide a list of the books you should obtain. Turn the list over to Santa Claus, who knows.

On Cooking by Sarah Labensky is a great book. It also has a companion CD that will automatically proportionalize her recipes. Labensky runs the Culinary Arts program for Mississipi State College for Women in Columbus Mississippi. I have talked with her over the phone and have traded e-mails with her on several occasions. She is very nice and very helpful and suffers fools like me gladly.

There are many books that will help you stay foccused. The Cook's Dictionary and Culinary Reference by Jonathan Bartlett is a good start.

Crudeau, I actually have the CD that goes with the text, I just am not technical enough to load it into the hard drive. I think that it is neat that you have spoken with the author.

did your school give you a list? will it be using the professional chef? IT WOULD BE INTERESTING TO KNOW. the food lover's companion is definitely a good suggestion.

how many cookbooks do you have?

Well I do not have a list yet but I own about 200 cookbooks now.
Iam sure that number will change in the near futute.

Kitchen Confidential!!! by Anthony Bourdain. A must-read for cooks, pro and non. You can also read more of his writing at http://www.ontherail.com (but only after you've stopped by cheftalk ). He writes about the life of a cook and about cooking. It's incredibly funny and will become more funny as your career as a cook progresses. He posts here from time to time under the name qjwin625; if you use the search feature, maybe you could find his posts.
Actually, whilst backing up to the main page, I saw a topic right here in the Bookshelf he started, titled "Bone in the Throat". Click on profile and then click on the "search all posts" feature.

Jesse,

I am pretty sure that On Cooking by Sarah Labensky is a Prentice Hall Book. Try Prentice Hall directly or Amazon.com ( I think that's where I got mine.)

Be careful of that book. French names are given for a lot of items unfortunately the translator didn't do a good job. Lots of misspellings. It always sadden me when authors don't bother to make sure the quality of the translation, specially when you consider that there are so many French speaking people right next door.
