Ok, I got the book and here'swhat it says on whole wheat breads. It doesn't mention whole-grain breads.
Quote:
Whole Wheat
The whole wheat setting offers a longer rise time for breads that contain more than 50% whole wheat flour. (Time: 3 hours, 40 minutes)

Here's the breakdown for a basic bread cycle of 3 hours which is supposed to work with "most" recipes. The book does not give a timed breakdown of any other cycles.
Quote:
At 3:00 The dough is kneaded for the first time. (10 minutes)
At 2:50 The dough begins to rise. (20 minutes)
At 2:30 The dough is kneaded for the second time. (15 minutes)
At 2:15 The dough continues to rise. (20 minutes)
At 1:55 The dough is "punched down." (30 seconds)
At 1:55 The dough rises for the final time. (55 minutes)
At 1:00 the bread begins to bake. (50 minutes)
At 0:00 The bread is finished.
