Wink Wolf Infrared Charbroilers

Hello fellow Chefs:

Have any of you had experience with Wolf (or other brand) infrared charbroilers? (I'm not talking about infrared broilers like in a salamader, but charbroilers similar to char-rock grills)? Seems to me all that grease dripping on the ceramic burner would cause it to gunk up over time and become useless. Any thoughts would be appreciated! Since I'm in Seattle, GO MARINERS!!

Yes, they're wonderful if you can keep them clean. Our company bought about 20 of these and their performance varied from kitchen to kitchen. SO... it's really up to the user.

I just looked at Wolf outdoor gas grills for possible use in a remodel and the retailer discouraged me because the each burner was only 10,000 BTU. Others (Viking) are generally near 25,000 BTU per burner. Additionally, I am at 7,000 feet altitude so every BTU matters.

I was quite surprised as I had assumed that their grills would have the highest output given that they provide so much commercially used equipment.
