Are these the chrome wire chaffer stands? Aluminum water and food pans? How many ounces fuel per can?

Just looked it up on their website, for a starting up caterer its a good deal.

Question for you. I am going to start smoking some fish, as the recognized resident maven
on smoking, at what temperature should I try and keep while smoking ? It's a small electric upright 3 shelf unit. Ill use king fish and cut it about 1/2 inch thick .

Ed,

190 to 200 if you can manage it. You want as low a temperature as you can stably hold, and still produce good smoke. You want a steady, thin plume of smoke (not billowing clouds) before putting the fish in the pit.

A really good source for times, temps, and very basic brining technique (you really need to brine fish before smoking it) is 3 Men. Here's a link: Smoke it Up !.
