Wink recommended serving sizes

Are there any Australian Chefs who can Help with this question? I have a portion size listing from TAFE (australian education)but it is mainly meat based. My project I am working on is for an Ovo-Vegetarian. Any suggestions where I may find a more diverse listing eg how much tofu etc should be plated for adult etc.

By the way I really enjoy reading everyone elses questions and have learnt a lot.

It's ANZAC Day here all quiet with the public holiday to remember Australian & New Zealanders who fought in WW2.

I am not Australian, but I was taught that a portion for an adult is a about half the size of a fist or a bit smaller. Not scientific but it work for me. You may be more generous with Tofu as it is very light.

gday sparkles, which TAFE are you attending?

anyway, my assumption would be that one would treat Tofu the same way one would treat , say beef, lamb or even pork. So my theory would be that Tofu would be a recommended serving of about 280 grams.

Im actually at Ryde TAFE (well sort of), so if you attend ryde and need a name to talk to, give me a yell.

Hey Nick.Shu
Im at Lismore TAFE doing Catering Cert IV,4 days a week. I had been debating about doing Commercial 3 so I opted for catering to decide if I like it.

Yep Im having fun, lots of cooking and restaurant running. I do some work experience at a local cafe/restaurant in a pub which is such a faster work environment than TAFE. Can't complain though because my class and the TAFE is great all round.
