Talking Culinary Schools

hello, i am looking at the profession of being a chef. im just wondering if anyone knew of any culinary schools or chef schools and if they know what the requirements are. please reply...thanks

Hi culinaryman, welcome to cheftalk! To answer your question, I know of two culinary schools that you can find on the web. I will give you their web addresses so you can check them out yourself. I'm sure they will show you what their requirements, etc., are. And I'm sure everyone else will add more choices for school to this list!

The first one I know of is Pennyslyvania Culinary Institute; you can go check it out at: www.paculinary.com

The second one (the one I am trying to go to in Denver, Colorado and which has branches elsewhere in America) is Johnson and Wales University and you can go check this out at: www.jwu.edu

check out www.shawguides.com it will tell you about every cooking school around pretty much. You have to have a high school or ged diploma to get in any school. Depending on what you want to do you can go to a community college program that is a lot cheaper or a big school that is more expensive but more intense program.

As a graduate and a former Chef-Instuctor, let me recommend my Alma Mater - The New England Culinary Institute (NECI). While it does not have the storied history of the CIA, it has many things that the CIA cannot offer (Nor can anyone else, by the way). Things like a 7:1 student-teacher ratio. That's not a stat or an average but a rule. No classes have more than 7 students. Incredible personal attention.

Also, NECI offers 2 paid internships (not 1 or none like most places) and all the classroom/kitchens are in real, operating restaurants that serve the general public.

In addition, they now offer a Bachelor's degree in Hotel Restaurant management.

Peter Kump's in New York City is a great place. I am a hack and spend a lot of time in their recreational classes but I know they have a well respected professional school. You can give them a call

Kump's is such a wonderful school. I feel it may rival CIA in the future. If yo have the opportunity to travel you might want to investigate some schools in Europe. The experience would be invaluable.

Alain how do you think Kump"s compares to French Culinary in New York I need to get my cretification and FCI has been recruiting me hardcore there is a 7k price difference too. Any comments you have thanks.....

HolyDiver - I was posed with a similar dilema (FCI vs. Kumps), and decided to attend Kumps. I visited both schools and met with people there. The great thing about Kumps that made me choose them over FCI and NYRS was that they don't hassle you or oversell you on their capabilitites like FCI does, in fact they encourage you to "spend a day" in a class so you get a feel for the school before making a decision. When I spent the day (a Saturday) in class I had a blast! As with any other school, you get out of it what you put into it, but the atmosphere and the people there are great.

I recommed you give them a call and try to set up a visit; the admissions people are great. Good luck!

Alain, can you recommend any schools in Italy that offer financial aid. I was unable to find any. I am considering the CIA as my first choice. They are going to help me visit the campus and also sit it on classes for a day...I can't wait!!!!

I do not know anything about this school, but the James Beard Foundation has a scholarship for one semester at Apicius the Art or Cooking at Lorenzo de’Medici in Florence, Italy.
