| Allergy Hello, everyone...I am also interested in attending a culinary school in my home state...but have a serious concern.. I have allergic reactions to shellfish! Just from eating it mind. Fried clams and clam chowder go fine with me...it's the other stuff...lobster and crab that give me hives.. My question is..will this be a detriment to my training? Thanks for any response anyone plans to give. Take care and God bless! ![]() |

| Years ago, I worked in a place where the sous chef was allergic to shellfish to the point where he couldn't even do any shellfish related prep-work, let alone eat it. Even with the allergy, he had worked his way to an assistant chef postion and was a very talented asst. chef, at that. Just pay extra careful attention to what is in what you eat if you are eating food that is prepared by your class-mates; many of them will be very inexperienced and there could be shellfish in something even if they say there is not.

| Perhaps chiropractic adjustments in the cervical (neck) would reduce those allergies. A few of my patients reported fewer allergy attacks following a series of cervical adjustments. The intensity of those attacks were reportedly diminished. Allergies are an overreaction of the immune system to something in the environment. The immune system is mediated by certain nerves in the cervical region. Hope this helps. ![]() [ May 31, 2001: Message edited by: kokopuffs ] |

| Dear Marco, First of, welcome to Cheftalk. This is the very best board! "Pastry Chef" comes to mind...don't know if that would be your bag? BTW, don't neglect Koko's great advice! Good luck to you, ![]()

| Thanks for the response everyone....Cervical adjustments...sounds interesting. I'd never heard of such a treatment! Well, that certainly bears looking into. I hope to partake in any shellfish extravaganza in the not so different future! Take care and God bless! |

| Marco: In orthopedic and chiropractic terms, the neck region is referred to as the c-spine, or cervical spine. I know a good chiro in the Sacramento/Lodi region: Dr. Shaun Hayes, Jr. He is excellent with necks (many chiros aren't). I went to school with him. Just tell him that Dr. KOKO referred you to him - if you're interested. ![]() |
