That brings up a good point. I recommend to culinary students to try to get as much experience in the food service industry while in school. That can be working for free in a restaurant to attending food shows and workshops.

Good advice Chef Koetke, but it can be impossible while going to some schools. I went to New England Culinary. While there I would have loved to work but the classes are set up like the real world and I was in cl****from 8-14 Hrs. a day. Most classes were actual production classes set up to serve the public. When looking at culinary schools find ones with lots of hands on classes and limited theory classes. [This message has been edited by Pete (edited May 30, 1999).]

the point of going to Kumps is you are smack in the middle of NYC= Food Mecca. the classes are tops 6 hrs long and if you are willing to you can pick up work in any major kitchen, for free, just by asking. that is why going to cooking school in a major city or close to it is hands down the best experiance you can start with.
