 Salad blues Looking for a recipe for a papaya dressing.Or a place to buy it.  |

 Take soft, overripe papayas (they should be soft and mushy) peel and seed them. Put them into a blender with some fresh ginger, rice wine vinegar, and a little salt. Blend until smooth. Then slowly add veg oil as the blender is running until the viniagrette takes on an almost creamy consistency. Taste for seasoning. You may want to add a little sugar if it is not sweet enough. You may also want to add a little fresh mint or even a little fresh basil as you are pureeing the papaya. |
