Raul-

Your question is one we hear all the time. So many factors come into play when deciding on a school. One thing to keep in mind is that you will need experience whatever you do. If you go to school full time you will get that experience after you get out. If you find a work/study program you can get experience while you work. The mistake a lot of people make is thinking they are going to go to school and come out a chef. It doesn't work like that.

A lot of it depends on how much money you can afford also.

I was just wondering if you live in Orange County, CA and in what city in Orange County? I have lived in the City of Orange all my life and I don't believe that there are any overly excellent Culinary Schools in Orange County. However, there is one up North in the Bay area that a lot of people tried to convince me to attend. Apparently it is quite popular but is not to the caliber of say the CIA. I guess it just all depends on how important the title of the school is to you. But don't get me wrong, the quality of the education is a different matter altogether...
