Guy,
I, too, am considering CPCC. If you drop me a PM (assuming you've reg'd by now), I can pass along my few dealings with the local ACF chapter. One of the guys I've met through that is the pastry instructor at CPCC. He's a CIA certified Master Pastry Chef....not bad credentials for this food-barren town!
